I got a 4lbs bone-in butt picnic roast this past weekend and it ran me $38. That seemed a bit steep, to say the least. But I know what I was paying for.

It is worth it just for the flavor. Brine it overnight then roast it.
Buy one of his chickens, brine it overnight, wash and dry in the morning, put in fridge uncovered for the day to let the skin dry, rub softened butter all over the skin, season and toss into a 450 oven then after a few minutes turn to 350. About 50 minutes eat a great roasted yard chicken that doesn't taste like Tyson chicken. I do it about once a week. I'm damn near pecking pea gravel.

I read a recent interview with the Iverstines. He says his farm is open to people stopping by to take a look. I'd love to take a tour. Would be Awesome to see the place and see cutting edge natural food production. They must have quite an operation to produce enough beef, pork and poultry to supply a butcher shop. I free range my own chickens but havn't noticed a big difference in the meat. Eggs yes. Taste of the chickens not so much. In the interview they said they allow chickens to pick thru the cow manure and eat the fly larvae and parasites. Might have to give that a try.

Read "Folks This Ain't Normal" by Joel Salatin and he has a bunch of youtubes as well. He owns Polyface Farms. He can get out there on the industrial farms and Monsanto but he is interesting and does a whole chapter on chicken eating cow shite.

Are you sure he isn't buying beef anywhere else and grass finishing it?
His hogs look to be mostly berks, but he has some crossing in there with yorks, hamps, and duroc judging from his pictures.

not to mention that making a left out of there might be the most difficult thing imaginable
i bring my dog to petz plaza at 730 am and its a pain in the arse to make a left to go to work. I usually make a right and turn on Edinburgh to turn around
It looks like its 10 times as bad in the afternoon M-F

It's actually easier when the traffic is backed up, because people will let you out.
I've already spent a bunch of money at Iverstine. Very happy to have a good local butcher shop.
