I'm a Georgia boy, who loves leftovers! Does anyone make a turkey gumbo with there leftover turkey carcas? My mom made a soup with the carcas last year that was ok, but I'm looking for a good recipe to make a gumbo?

Make a gumbo every year with turkey stock made from leftover fried turkey carcus. Makes a great stock!

roast it in a 400 degree oven for about an hour then throw it in a stock pot with the usual aromatics for three or four hours. Leave the lid off if you want it to reduce a bit.
I did two dry brined turkeys and my stock came out incredible this year. IDK if it was the dry brine that made a difference or the fact that I roasted the carcass in the oven first. I also threw in a bunch of rosemary sage and thyme in the stock pot.

Many years ago, a girlfriend said her family always made gumbo with the turkey carcass, so we tried it. Neither of us knew how to cook, but we gave it a shot.
Not sure what we did wrong, but it was the worst gumbo I have ever had. We both pretended to like it. I still laugh about it.

I'm actually re smoking the carcas now, with tons of butter and tony chachuries (sp)!! And then taking it to my moms.

My mom is always worried about her roux, it's always golden/ dark brown. If I knew how to submit pics I would. My moms from vidalia ga, she's a hella of a cook!! Sammy kershaw song?

I'm not sure why you would ask if something was a good idea, then get advice, say "will do," ... and then still do what you said you would do in the first place ...
"Tons of butter and Tony's" will not make a good gumbo.
Neither will a light roux like the one you say your Mom makes. You need that roux to be dark, bruh.

I don't know anyone who doesn't make gumbo with the turkey carcass.
