The higher the temp setting on a pellet, the less smoke you get. It would actually be better to do 215 for the first 30 minutes then bump to 350 the last 30 if crispy skin is what you're after.

Correct. Farva, you may like a lighter smoke flavor. If you do, you probably won't need an A-Maze-N tray or smoke tube. I did.

Thanks for all the info. My brother had told me to get a can of shite biscuits, as he calls them , to find the hotspots. He has a Yoder so he said he wasn’t familiar with the GMGs and didn’t know if they had hotspots.

Just started looking at GMG last night thanks to this board. I’ve been looking at camp chef and treager. But trying to find best bang for my buck. Glad you sound satisfied!

If you are anywhere near the Houma area or don’t mind driving there, the guy I got mine from said he’s get a few demos he’s trying to get rid of and he’ll give you a good deal.

I got home at 2:30 yesterday and I’ve been smoking since then. Did ribs, butts, sausage, just took two geese off. Finally about to shut her down and cover her up before the rain tomorrow.

I just bought a camp chef, with the sear box, but the GMG was my other option.

Pork Butt is definitely the easiest thing I've cooked so far, with turkey being 2nd. I've done 2 racks of ribs that were just meh, and a small brisket that i rushed and it was tough.

My favorite though was some reverse seared Ribeyes. The best "home made" steak 8ve ever eaten.

Sorry for the quick hijack, but what does the tray do? I've heard about using them with a masterbuilt electric, but why with the pellets?

GT, you're absolutely right about the customer service. When I opened mine a year ago, it didn't have a grease bucket. I called on Christmas Eve, not expecting an answer and had one in 3 days.

The tray holds wood chips (or in my case, pellets) that you light on one end and they burn slowly, adding more smoke to the chamber and your meat.

Just bumping this thread to support your point on their customer service. So I've got a pork butt on my Daniel Boone right now, and I noticed that the food probe that came with my smoker was reading about 15-20 degrees higher than my quick read probe for the same spot. So I emailed their support, and had a response about 2 hours later asking for my information and they said they'd send me a new probe. My smoker is over 2 years old, yet no questions asked. I sent my information and they responded within 20 minutes saying the new probe had been ordered.

Told them the support was a big reason I'd stick with GMG long term.

That’s great to hear! I’ve done my research and decided on Daniel Boone as well. Gonna get the WiFi for the hell of it. Now I just have to drive to Beaumont to get it.

What kind of deal did you get? They had the most ridiculous sale going on around the holidays...I think the Daniel Boone with wifi and stainless steel lid was something like $400. I think I paid $500 for my basic little DB. But I love it.

SOB I wish I was even looking around then but I wasn’t even aware of GMG. All I’ve seen is $699. Which idk if that’s high but definitely seems reasonable with the reviews I’ve seen and considering prices with other brands.

I look at it like this...a middle of the road to decent weber gas grill is going to be at least that much, but that Weber isn't going to make kickass BBQ. And you can still cook everything on the GMG that you could on the Weber, it'll just taste better because it's wood fired.
