I've eaten over homemade mashed potatoes which was pretty good. Never done the potato salad thing. I'll have to give it a try.

That deal with the gumbo, poached eggs, and biscuits sounds pretty damn good. I'll be doing that with my next gumbo.

Now that's just crazy talk. Of course the potato salad still has eggs in it. And the pickle texture and tang (or even sweetness) offset the gumbo flavors just right.

I've dipped potato salad and it's fine, but I like my rice or nothing, usually. I ate some for lunch with no rice.

I love Dreamland bbq sauce on top of potato salad, especially warm sauce and salad.

Yea, the first one had some bumps, but second one was great. Basically exactly how a gumbo should be cooked IMO. It was also documented on here. I don't have it bookmarked unfortunately.

I need to try this out. Never had it with anything but rice. Granted I wasn't raised on the gulf and am not a gumbo afficianado.

I am surprised at how many people have never heard of this .. I thought a scoop of potato salad was a standard south Louisiana thing ..

The worst gumbo in south Louisiana is better than most of the gumbo in Atlanta. They damn sure don't offer anything other than rice and probably would look at you funny if you asked for potato salad

I have heard of it, but never in my life have I seen someone do it. Never on either side of the family. Half Cajun half creole. I just can't imagine mixing the two and is a complete turnoff. If it works for you great, to me it would ruin it if mixed in

I didn't know there was any other way to eat gumbo than with potato salad. As a matter of fact, my 7 year old daughter won't eat it without potato salad.

I tried potato salad in gumbo at a tailgate. It was pretty good. The salad was creamy and did cool the gumbo just a bit. When I went back for seconds I put the gumbo over rice and had a scoop of potato salad on the side.

For the one millionth time, tomatoes don't go in my gumbo....tomatos sauce goes in my etouffee, where it belongs!!!

And I'm sorry you like your gumbo runny. I'll bet your red beans n rice are runny as hell too.

Test...can you eat all the gumbo with a fork? If not...too runny. (Not that I eat gumbo with a fork, but it's a good test.)

Gumbeaux's in Douglasville is pretty legit. Every time I drive to Atlanta, I try to hit it on the way there, on the way back, or both.
