I’d give it to nature. Personally it would never taste right because I know it’s 3 yrs old

It’s fine if it was vacuum sealed.

My brother ate a 7 year old elk roast that I had given him. Said it was fantastic.

If there is no freezer burn it’s fine. It won’t make you sick even if there’s freezer burn just doesn’t taste good.

When I lived in a suburb of Memphis (76-83) I knew an older guy who had spent significant time in Shelby County Penal Farm. He was on kitchen duty often and said they were eating eggs frozen in the 50’s. 20+years in a freezer to 1st thaw in an oven. Said nobody ever got sick but nobody asked for recipes either.

Smoke it or turn it into jerky.

We cooked one from 2019 wrapped in butcher paper last week in the crock pot. It was delicious.

And it will taste just fine if you trim off the freezer burned part.
