So let's just leave a big arse bone in it so it looks cool? This is a really dumb new trend.

yep, that is about $10 wasted on the weight of the bone.

Sounds like something that someone who cooks a steak on a gas grill as opposed to charcoal would do. I dont get it either.

According to my professional chef buddy (and this guy absolutely knows of what he speaks) the bone adds flavor to the meat close to it when cooked. He explained in scientific detail what occurs when the heat is applied and I just stared into my drink realizing I shouldn't have slept through High School science class. Never the less, I believe what he says.

That certainly accounts for the bone-in cut but as for the excess hanging off the end... Unless you are going to Cave Man it and use it as a handle to pick up your food, I don't see the point.

Can you explain how this is a "new trend?" Also, I have never heard the term Tomahawk Rib-eye. We always called it bone-in or Cowboy Rib-eye.

The meat next to the bone is sweeter like in a t-bone or bone-in chop

I don't really get it either, though the one time I had one in a restaurant, it looked really cool when they presented it at the table.

GF gets pissed when I start gnawing on the bone at the table.

Breaks my heart when I can't bring home bone for dog.

ask this guy

It's presentation. It really serves no other purpose.

However, I save all my bones and make stock so nothing goes to waste.

I think the rise in popularity is due to food blogs and sharing on other Internet platforms. This cut photographs really well. There is something about meat seared on a bone that is appealing in a very primal manner.

I believe this trend has also affected beef back ribs. They used to be incredibly cheap. But demand has increased and so has prices.

Bone-in is different from Tomahawk, no?
