How to cook Goetta?

I have a friend from the Louisville area that gave me 5 pounds of Glier's Goetta. I introduced him to Boudin so he gave me this as his version of Boudin. It's pork and beef mixed with steel cut oats. How do I go about cooking this stuff?

Is it raw or has it been smoked already?

It was raw. I panned fried it and topped with maple syrup, caramalized onions and mushrooms. Paired with a mimosa and it made a great brunch. I can taste the resemblance to boudin. Just a different texture with the grain.

Poach it first, then do what suits your fancy to it.
