It sure does and I've certainly never detected it (which indicates it's not necessary, to me), but do go back to my post in which I said I like my own gumbo better than Mr. B's. Must be the chili powder in it.

On occasion, I use a little thyme in shrimp gumbo. Just a smidgen, though.

I'll use a little thyme in a shrimp creole, but not in a gumbo. Just me though. Again, to each his own. I use the trilogy, a little garlic and maybe some green onions or parsley in my gumbos. Only seasonings are salt, red and black peppers.

anyone make a dove and sausage gumbo? Thinking about this real soon. Smoke the dove breasts or brown them or just toss them in the gumbo? sound good eithr way.

I definitely agree with the to each his own sentiment, but you guys act like some of these ingredients are pulled from left field.
I'm gonna have to thank Gris Gris for posting the link to Mr. B's Gumbo Ya Ya. Ingredients as follows:
1 lb. (4 sticks) unsalted butter
3 cups all-purpose flour
2 red bell peppers, in medium dice
2 green bell peppers, in medium dice
2 medium onions, in medium dice
2 celery stalks, in medium dice
1 1/4 gallon (20 cups) chicken stock
2 tablespoons Creole seasoning
1 teaspoon ground black pepper
1 teaspoon dried hot red pepper flakes
1 teaspoon chili powder
1 teaspoon dried thyme
1 tablespoon chopped garlic
2 bay leaves
2 tablespoons kosher salt
1 lb. andouille sausage, cut into 1/4 inch-thick slices
3 1/2 lb. chicken, roasted and boned
hot sauce to taste
boiled rice as accompaniment
Gumbo Ya Ya is some pretty good stuff, so I don't feel like I'm in bad company.

I'd probably roast or smoke them, pick the bones, roast those bones along with some chicken bones, onions and carrots; make a stock with that. If you throw the whole doves in and hope for flavor from the bones, they're definitely going to be overcooked. But what do I know, I'm the crazy dago who puts chili powder in his gumbo.

Just had to cancel out for the ULM game. Secret missions and all, you know. Gave my tickets to a relative for this week and Ole Miss because I'm a good and very generous witch.
