Mine turned out to be the best gumbo I have ever made. My turkey was smoked and injected. I think that was key. I brought the carcass and a few of the in tact parts to a boil and it simmered all afternoon. Added the white meat during the last 30 minutes.

Smoked an 18 pound turkey for thanksgiving. Picked off the leftover meat and boiled the carcass for stock. Made a turkey and sausage gumbo on Saturday. Don't think I did too bad for being a Yankee.

Cooked mine on Friday. Snapped a few pics and am finally getting here to post them. I bought a quarter turkey to get meat to make sure there would be enough for the gumbo, but even with that I’m lacking enough. My smoked turkey was demolished on Thursday. Still it came out killer. I like a very dark roux, and it took me about 40 minutes to get it there.
My smoked turkey and andouille gumbo. I use the carcass for stock, and I simmer it down with some allspice, cloves, garlic, onion, salt and peppercorns. I do grate some nutmeg on the final product when I add my file. I love the way those fall spices pair with turkey.
