Not a recipe, but a method: toast half of the coconut, leave other half untoasted. Make a coconut pastry cream like this:

Not a recipe, but a method: toast half of the coconut, leave other half untoasted. Make a coconut pastry cream like this: LINK and put the toasted and untoasted coconut into it. Put into a pre baked pie crust, top w whipped cream spiked w rum.
