From the linked video, I took away several points:

1: He was asking for ideas on -- and promised to feature -- stuff he has *not* already done. Took lots of varied suggestions.
2: Said many times there were Good Eats shows, ideas and techniques that he wants to update with new thinking.
3: For a network that made him famous and wealthy, he openly ragged on Food Network (for not letting him do certain themes) and the idea of competition shows (he's sick of them).
4: Don't ask him for a new crawfish show: that request got the tersest response ("done it").
5: Food Boarders unite: he's going to tackle Sous Vide (said Food Network would not let him do so in version 1.0).

Bonus: the Yeast Puppets return.

There was a good bit of satire in that. It was over the top because of idiots who deep fry partially frozen turkeys and such. He got his point across fairly well to be careful and safe...not to setup a ladder yourself.
