You gotta ask for it, but the Prime Sirloin Cap roasts are usually in the back with the butcher. Costco cuts these into strips and machine tenderizes them for some reason (like all of their steaks).

If you ask the meat area employees if they have a pack of it in the back, they will look. Don’t always have it, but if they do it’s 3 sirloin caps to a package, so expect to pay for about 4-5 pounds of meat.

The best thing is, these things already have the tough part removed from the traditional sirloin cap, so you can buy and slice into steaks.

This cut is no good prepared beyond medium rare, whether as a roast or a steak. But it’s the most flavorful beef cut on the cow when properly butchered and prepared. And I love ribeyes for reference

Not if you gotta drive a long way to get there. Truck stops have the best gas prices if you live out in the sticks.

How do you cook this? Would sous vide work?

Sear it hot and fast if you cut into steaks. Anything beyond medium rare and it gets tough, even with prime cuts. Best beefy cut of cow if you simply season and sear it.

The free, digital tire pressure thing in the parking lot. $7 car wash, maybe it's 8. Tires if they have ones that you want, Comes with the hazard I think.

Cut into steaks with the grain. Then I either sous vide or reverse sear.
