since moving here a few years ago i have eaten at gino's several times. i know some of the history and really enjoy their food, particularly their lawrence bread and seafood cannelloni. have any of these recipes or any of their recipes been shared on this board?
i know his mother used to be in the kitchen every day until she passed away so i am sure some of the "secrets" have been closely guarded and rightfully so.

Good luck with that, great restaurant, if you have not already try the angel hair and crab, it is listed as an app, but can get an entree size, and my favorite VEAL SORRENTINA
as for recipes, like many other great places I am sure it is more technique than recipe

i agree, i'm certain the execution and passion from his mom is what made it and the workers that have been there that carry on that same love.
still worth a shot to ask!

Momma was still "in the kitchen" but Gordy is the chef.
Laurence bread could be achieved if you just deconstruct the topping. garlic, parm, oil/butter baste and some seasoning
other recipes? good luck

I wonder if Gino's makes their bread or gets it from a local bakery?

I think it comes from Waynes Bakery.
Place is my favorite restaurant in Baton Rouge, but it still baffles me that the "dish" that most people rave about is grocery store bread topped with garlic, butter, and a bit of cheese.

it does, and likely comes from a specific bakery. i think its the one YA Tittle said.
I know they aren't making it on site though

I remember having crawfish arancine with a sauce during crawfish season. I haven't eaten there in about 2 years, but the last few times, there was no seafood arancine on the menu, I don't believe.

That’s how I feel about Little Village as well. It’s not that I don’t think the bread is good, I just don’t see why it’s worth the raves that it gets compared to the other food.
Gino’s has some dishes far more worthy of praise.

You are correct. I am friends with Laurence and he is tight lipped even with me but we met some of the old chefs and got a few recipes.

I don't know if any of you guys have tried the fish soup at Gino's. Mama cooked it one night I was there and it was incredible. Very rare they have it but when I go back home I have taken people from all over the world there and they are amazed.

72 y/o wife still raves about Arancini from Gino’s. Happy wife-happy life.

Best restaurant in town if you have never been…you need to go…. It’s packed every night when the legislature is in session and the Friday night before an LSU game….
