Galette des rois - French king cake - Almond cream filling

My daughter and I have been wanting to make a homemade French style king cake for quite awhile. This was our first attempt and we were pretty pleased with how it came out.
There are quite a few recipes out there and we sort of adapted it for the ingredients we had on hand.
We blanched a cup of almonds to make the filing. After they cooled we ground the almonds and mixed it with softened butter, sugar, eggs, a bit of flour, almond and vanilla extract.
Cut a sheet of pastry dough to size and added the filling. I wish I would have taken a photo of the almond cream filing but I got distracted with the preparation.
After adding the second pastry sheet on top, we brushed with egg wash and cut in a basic design.
We baked it for about 25 minutes @ 375.
We added a little powdered sugar to finish it off.
It was very light and flaky and not overly sweet. Sorry I don't have a money shot because I was too busy eating.
We would definitely bake one again.

That looks great! Bought one from the Farmers Market a couple of weeks ago and I was impressed. Might have to try this out.
