Recently went to Nashville to visit a friend and had some Hattie B's Hot Chicken:

The stuff is absurdly delicious and I'm going to try out the Bon Appétit recipe tomorrow. It calls for a dutch oven to fry, but I was thinking of using my cast iron instead. Any experts out there know if this will be a problem? See any other issues with the recipe that I could avoid?

Link to recipe for anyone that is interested:

Like a big cast iron pot? Is that not a dutch oven?

I have a feeling they actually intended (un-enameled) cast iron pot since enameled ones aren't supposed to be TOO hot.

Oh okay. I'm sure you could do it there. I'm a deep frying type, but I imagine it will be fine. Would be a different type of crust, though, depending on depth.

I actually had no idea what hot chicken was before last month, and lately I'm seeing it everywhere: in the previous fried chicken thread, my friend ordered it at Saltine in Jackson, saw it last night on Parts Unknown, and now this thread.

How deep is your skillet? I have the cast iron fryer skillet/pot. It's much deeper than my cast iron skillet in which I could not fry chicken. It's not nearly deep enough.

3 inches, round about, I suppose. The recipe calls for 2 inches of oil, so obviously the chicken has to be turned.

Actually... I'm seeing now that most are around 2.5, so that might cause some trouble. I do have an induction cooktop that I could use instead... I guess I'll do that.

I have two fryers, one wider than the other, but both are pretty deep. This one is about the size of one of mine and it's a darn good price, I think.

The 5 quart is a good price, too.

I wonder if anybody in Birmingham makes hot chicken.

I'd love to try it.

you should really own a black iron pot if you do a lot of cooking. that's just my opinion though and I mean nothing negative by it. you can find some nice large pots for around 50-70 bucks that come pre-seasoned and will last you the rest of your life if properly cared for. now is a better time than any to go out and get you one.

eta- I have the 5 qt that gris linked and honestly, it rarely gets used.

Couldn't agree more. I have an 8 qt. cast iron pot that I use more than anything else in the kitchen (except for my non stick pan I use to cook eggs.)

I've always used a skillet with oil halfway up chicken and a glass lid because that's how momma does it. Start in hot Crisco, let it cook until time to turn, put lid on for about 6 minutes to cook through then take lid off for it to brown and crisp up.

I had Hattie's hot chicken and didn't like it. It's just too hot for me. Well I did eat it but let's just say it wasn't my favorite.

No doubt, had a somewhat recent break-up and have spent the last few months building up my stock of cooking supplies.

from the recipe:

quote:

Whisk cayenne, brown sugar, chili powder, garlic powder, and paprika in a medium bowl; carefully whisk in 1 cup frying oil. Brush fried chicken with spicy oil. Serve with bread and pickles.

so you take the fried chicken out of the oil, then brush it with spiced oil? wouldn't that just make everything super greasy?

I've heard this stuff is really good though so I'm still a bit tempted to try it

Yep... it is not for the faint of heart. Definitely something a healthy individual can only eat every once in a while.
