I have a freezer in my shop that I keep my game meat in and I left it open since Monday evening when I got some fish out. All the deer roasts and fish is still frozen hard, but my deer sausage de-frosted but is still feels as cold as it would in an open air store freezer/cooler.

Would y'all trust it or should I just chunk it out?

I've had this happen more times than I care to admit. If it's nice and cold and you're going to cook it thoroughly over high heat, it's probably fine. There's always a risk. Just depends on how worth it, it is for you to take it. Sometimes, I cook the defrosted things right away and sometimes, I toss. Depends on what it is and how cold it feels. As temps rise and fall, it could have warmed and cooled again overnight, so keep that in mind if the show doesn't have AC.

Pop a thermometer in it. Anything under 40 degrees and you have no worries. Up too 45 degrees cook right away and you're still good.
