NBD - Stone Russian Imperial Stout (non espresso)

Starting to worry because I haven't had any real food since lunch at 10am. Might go all Zappa in this thread.

Now I'm mixing the oak tea with some beer and cider. I didn't like it in the farmhouse ale, but it is fantastic in the cider. Not oaky at all. Took the slight bite off the aroma and smoothed out the taste.

4th drink was the same Glenfiddich with a cube. FBD may still come next. Great NBA Final series. We all knew it was over when Spurs failed to take game 6.

Just been doing a lot of experimenting lately with new things. I'm wanting to add subtle complexity and trying to figure out various ways. Trying to use some new grains, yeasts, and flavor additions.

I don't think I'd age my farmhouse on oak. I'm wanting to add it at the beginning of fermentation so the yeast can break down the vanillin and leave me with a chewier, less oaky beer. That's the plan anyways. In my research I don't think American oak is the way to go to achieve that, but it's what I had on hand tonight to try out. I need to order some French and Hungarian oak and try some more teas.

No, got the BIL to send them in from California because I knew LC wouldn't get any and I'm not going to be able to get out of town for a few weeks. Was afraid I'd miss out, I really liked it last year so I didn't want to take any chances.

I was thinking French would be a more subtle oak. But with a farmhouse, it wouldn't take much or too long.

For sure. I listened to an amazing Brewing Network episode the other day with Shea Comfort, a winemaker and homebrewer. He leaned on the side of subtlety for oak and I learned a bunch. I highly recommend the episode. He also talks about using wine yeast with beer, which was a mind-blowing discussion.
