So the food menu at Pelican House is about 100 times better now than when it first opened. Prices are much more in line, and the product is superior. Got a blackened alligator poboy with fries for $11, tax included.

I've gotten that twice now. It'll prolly be my go-to food option when I'm eating there. It's pretty solid. Real french bread.

Question: How much does temperature change affect a beer before it is opened? Say it was room temp, bought it cold from the store, went back to room temp for several days, back to cold in my fridge, then consumed? As long as it's staying at comfortable temps, all should be good right?

It should be. As long as it didn't freeze or get really hot.

I dont think too much about it. I put my brews in the fridge after its decided they are going to be consumed. I converted a small closet into a cellar and it generally stays about 68 degrees or so and pitch black dark in there.
I cant imagine that high temperatures are good for brews but I've also noted at some acquaintances places that humidity inside their beer fridge creates an issue too. The caps begin to rust and the seal on the cap eventually breaks unless the fridge is humidity controlled. I dont think prolonged aging in a uncontrolled fridge is really a great idea.
To me the best situation is a fridge modified for exact temperature and humidity control. In the absence of that the best case is a small cellar in a dark and relatively cool area.

Good news for LC people, Holus has Dr Hoptagon, along with some fresh Swwetwater and a few other things. The Southern Tier stuff is still dated 4/2013 though.
