I love a good homemade meat sauce with a mirepoix, red wine, anchovy paste, etc.

I love that style as well, but I was really jonesing for tomato-based sauce. It's so rich.

I'm new to sours, and I've noticed this as well. (Though I wasn't drinking the stuff you had!)
Things I thought were sour before leave me wanting way more bite now. And it's only been like 2 months since i've really given them a shot
