Favorite pot roast recipe

So how do you do your pot roast?
My wife is out of the country for longer than expected and I'm tired of eating out alone for a few days.
What's the best way to do this? I have an old standard recipe but am looking for something new or inspiring.

sear the piss out of it. take it out. sauttee my onions and bellpeppers (diced). add meat back to pot. add water. put on medium til water is reduced to nice thick gravy. serve over rice.
I use a beef shoulder most of the time. but, I like a chuck too.

I like to use the crock pot. Add two cans of cream of mushroom soup as well as a package of beefy onion soup mix with no water and mix very well. After this I season the roast with salt and pepper and place into the pot. Cook on low for about 9 to 10 hours.

Like this...but I like to cut sits in my roast and stuff it full of garlic before piss sear

Did one in the crock pot Saturday. Seasoned with Montreal. Half an onion diced in the bottom. Added some worcestershire and half of a Karbachtoberfest. Cooked on high for the first hour then low for about 4 more hours. Made some darn good sammiches !

its pretty damn hard to mess up a pot roast
throw it in the crock pot, put some liquid in it, a few carrots or veggies, and any mix of spices you want
set it and forget it for 8-10 hours and shite will be like butter

My advice? Don't use a standard cut, use short ribs. And from there use the Pioneer Woman's recipe here. Certainly more expensive than pot roast but it is definitely worth it.

S&P a chuck roast and lightly flour it.
Sear in a dutch oven.
Remove the meat and add some chopped onions and garlic and saute just a touch.
Deglaze with red wine.
Drink some red wine.
Add meat back in with some fresh thyme and rosemary.
Cook in the oven at 350 for a couple hours.
After the meat has cooked for a bit, add in some chopped carrots, potatoes, and shallots that have been tossed with some S&P, fresh parsley, and oil.
Cook for another hour or so.
Depending on how much wine you used, you may need to cook the gravy down some at the end. Just depends.
The trick is you don't want to cook your vegetables so long that they turn to mush. A lot of all-day crock pot recipes will do that.
The only picture I have of the process. Not a very sexy picture.

one tip= not sure if you watch your calories/fat but i do and i dont mess with flour or oil or adding additional calories to the dish
the meat has plenty of fat and will render down and provide plenty of flavor and moisture
