I asked my mom (a Eunice native) and she says she uses a little less roux when adding okra to chicken and sausage gumbo.. and she also uses Rotel.

If nothing else, this added a lot to the list of cookbooks for me to collect.
I love Louisiana cookbooks. The smaller the community the better.
