Easiest way to cook chicken for Jambalaya kit

I have a few packs of some good Jambalaya mix that I want to cook up. But I'd like to figure out the quickest, easiest way to cook up some chicken to toss in with the sausage.
Any tips? Boil, grill, etc?

What kind of chicken?
Cube, season, put in a skillet and sauté about halfway over medium heat, add a few tablespoons of water, cover and finish for a few minutes. Then add to your rice.
10 minutes tops.

Probably boneless, skinless breasts, most likely. And good luck finding decent sausage in Colorado. It's pretty much all hillshire farms out here, and unfortunately it's all precooked.

Bake chicken quarters in pyrex or deep pan, use the stock as the water for the mix. Pull the chicken.

I boil chicken thighs for an hour and use the stock for the rice.
Just curious, but what kind of mix? I like the Louisiana Fish Fry product and add a chopped onion and bell pepper to it in addition to chicken and sausage.

Kind of expensive, and I want dark meat anyway. Costco has these great thigh packs. They come in a 6-pack of 4 thighs per pack, which you can cut into individual packages and freeze. It's really convenient to deal with, and it's like $12 for a whole package. I use them for jamb, chicken soup, fricassee, etc.
