If you are using olive oil then there is a good chance that is why it is rancid.

As soon as I read he was wiping them down with olive oil I cringed and knew that was the answer. I'm about 99.9% sure that is the problem.

Ditch the olive oil.

clean well with soap and water.

Use a very light coat of Crisco, lard or other shortening.
