Duck breast gumbo

Looking to clear out last years kill. Got a quart of duck breast no bones in them. Any good recs. would like to slice in strips and do a gumbo. Tired of duck bombs

I like to smoke them for a bit. Smoke till medium rare, slice and add with good andouille and some fatass oysters.

Duck and oyster gumbo makes for some fantastic farts!

Smoke them till medium rare, slice cross grain and put in gumbo at the end of cooking

and make a darker roux than normal, almost black
duck gumbo to me benefits from a really dark roux that doesn't thicken as much

also, if so inclined, chunk and toss in some sweet potatoes
