Deviled Eggs 4 Ways




Classic Deviled Eggs
Makes: 24

INGREDIENTS
12 eggs
½ cup mayonnaise
1 tablespoon mustard
1 tablespoon relish
1 teaspoon salt
1 teaspoon pepper
Paprika, for garnish
Parsley, for garnish

PREPARATION

Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil. Once boiling, remove from the heat, cover, and let sit for about 12 minutes. Transfer the eggs to a bowl of ice water for about 3 minutes, then peel each egg. Cut the eggs in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside. Mix all the ingredients with the yolks and transfer to a piping bag (any zip bag with a corner cut off will do). Pipe the mixture into the eggs, garnish with the paprika and parsley, and serve chilled.




Cajun Deviled Eggs
Makes: 24

INGREDIENTS

12 eggs, hard-boiled
½ cup mayonnaise
1 tablespoon mustard
1 tablespoon Cajun seasoning
½ cup celery, finely chopped
½ cup bell pepper, finely chopped
1 teaspoon hot sauce (or more for desired spice)
Smoked paprika, for garnish
Chopped green onion, for garnish

PREPARATION

Mix all the ingredients with the yolks and transfer to a piping bag (any zip bag with a corner cut off will do). Pipe the mixture into the eggs, garnish with the smoked paprika and green onion, and serve chilled.




Loaded Deviled Eggs
Makes: 24

INGREDIENTS

12 eggs, hard-boiled
½ cup sour cream
½ cup cooked bacon, chopped
¼ cup chives, finely chopped
½ cup shredded cheddar cheese
Salt, to taste
Pepper, to taste
Chopped bacon, for garnish
Chives, for garnish

PREPARATION

Mix all the ingredients with the yolks and transfer to a piping bag (any zip bag with a corner cut off will do). Pipe the mixture into the eggs, garnish with the bacon and chives, and serve chilled.




Guacamole Deviled Eggs
Makes: 24

INGREDIENTS

12 eggs, hard-boiled
2 small avocados, diced
¼ cup cilantro, chopped
¼ cup jalapeno, seeds removed and diced
½ cup red onion, finely chopped
½ cup tomato, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 tablespoon lime juice
1 teaspoon salt
Chopped tortilla chips, for garnish
Cilantro, for garnish

PREPARATION

Mix all the ingredients with the yolks and transfer to a piping bag (any zip bag with a corner cut off will do). Pipe the mixture into the eggs, garnish with the cilantro and tortilla chip, and serve chilled.



I'm going to make the guac and cajun style tonight and post pics. Love me some deviled eggs.

I love me some deviled eggs. We made chicken salad deviled eggs a while back. They were so damn good.
Shredded chicken
Eggs yolks (boiled obviously)
Creole mustard
Blue plate mayo
Finely chopped onion
Cajun seasoning
Garlic powder
Mixed up to taste
Mix and pipe into boiled egg whites
Garnish with green onion

Interested to hear what you think of the guac ones. I love deviled eggs and I love guacamole, but for some reason the two of them together does not sound very good.

I like to make them with smoked salmon then garnish with salmon roe on top. I don't care for paprika on them and I don't like them too sweet but man I do love them.

Sounds good, though I've never seen a deviled egg that I wouldn't destroy. I love them.

Egg salad made with guac instead of mayo is friggin delicious

They sucked. Would have been better with straight guac. The Cajun ones weren't that great either. Going to stick with my dad's traditional recipe.
