Do I treat It like a pot roast? Gravy? Onions?

I'm not exactly sure what part of the deer it is. I'm assuming shoulder?

I wanted to put it on the egg but after reading up on it, it appears to be a bad idea-too chewy.

I would treat it like a pot roast unless you hear otherwise from someone like Otis2, Martini, etc.

Did you sear the sides before you put it in? Lay down a bed of onions, garlic, and potatoes, then add stock, carrots, and celery.
You'll do fine

Have you ever tried BBQ front shoulder in a slow cooker?

Yes, but brown it first.

I've only done this a few times with a front shoulder, not roast per say.

put shoulder in slow cooker at 325 for 3 hours covered. Use the BBQ of your choice and cut it with some worchestershire sauce/ Italian mix. Nothing to it at all.
