Took some deer out the freezer started drinking and cooking

Pepper:salt ratio? Trying to figure out a good balance for when I try out the pepper/salt crust again. Last time ended up too salty

My backstraps and tenderloins hardly ever make it to the freezer much less untill July.. Shame on you!
