Are you frying it whole? Usually I see where it's cut into medallions then pounded flat.

Just wait till it looks close, yank it out with some tongs and take an internal reading. 145 in the center is perfectly safe and still slightly pink. I would guess it will take 8-12 min depending on the temp of your grease.

Why deep fry? Roast in over 425 20 or so min.

I have sold the Turkey Fryers for years and many of my customers have given feedback reg beef roast and pork tenderloin.
It seems as if 5 min per lb at 325-350 has been their guideline.
