Custom Ground Beef Blends

For Father's Day I decided to get myself a little treat from Fresh Market. I got some short rib, brisket and chuck and had it ground. I made pimento cheeseburgers. They were pretty delicious. I'm a burger whore so it doesn't take much to please me, but I do love a good hand crafted burger, not too big on the fast food stuff. Anyways, what are some blend combinations that make good burgers?

Brisket is probably the best. I buy whole packers, cook half with chipotle peppers, tomatoes, beef broth, adobo sauce and hatch peppers braised in a Dutch oven. Remove meat and shred for brisket tacos, blend sauce for good taco sauce.

Then grind the other half for hamburgers and I trim very little fat. I've mixed chuck, short ribs and top sirloin with it. If you start with brisket or short rib you can add whatever. Those two have the best flavor.

Is there any way to get good kobe beef from Japan? I would love to make a burger out of some of that
