Crawfish Boil sides and additional food

Need some advice on side dishes and an additional entree. Throwing a crawfish boil and not sure how many people are true crawfish fans. So, I want to offer a second dish. I want to keep it south Louisiana: some ideas are red beans and rice, gumbo, jambalaya. We were also looking to do this th day before. Any thoughts?

Also, what are some sides we can have: salad, chips, eat.

the only side dish I ever had with crawfish is beer.

V we did this for 15 years in South Carolina. We always had jambalaya and red beans and added pulled pork. Nobody ever left hungry.

If you have people helping, and jambalaya or fried fish is great.
If someone doesn't like that, they can eat finger Sandwhiches

We were thinking red beans or pulled pork and make them both a day ahead. It is a fundraiser and it will just be two of us doing the cooking.

Pulled pork a no brainer then. Maybe have a few burgers for kids.

A nice light make ahead slaw is a good side. You can add a number of things to your boil for sides like asparagus, artichokes, sausage, various other vegetables... Boudin is certainly a good idea unless your people won't eat that either. Might be good with the red beans, too, as would the sausage from the boil, or I think so, anyway. Spicy sausage with those beans would be tasty.

If you aren't going to boil shrimp, you could make a shrimp dip or look in the recipe book for the crabmeat layered dip/spread. I make that with shrimp quite often. Just buy some boiled shrimp and use those.

You could have muffalattas or make a muffalatta pasta. I think there's one in the recipe book that's best made ahead. If not, I can find mine and post it, but I think it's in there.

I wouldn't make jambalaya the day before, myself, but chicken and andouille gumbo or red beans would work made ahead of time. I agree with Walt on having boiled shrimp if your people will eat them.

Looking at 25 people and no transporting. All at our house and we have two refrigerators so cold storage is not an issue

That's good. Very manageable. You have a lot of leeway for choices with that number of folks and setup.
