Cooks Illustrated Meat Book

This came yesterday and it is pretty impressive, great recipes. I think my favorite part is the educational stuff on how to select meat, what to use different cuts for and how to prep cuts is the best part.

Have that book and love it. Use it often. I really like how they tell you which cuts are best suited for each recipe. There really is a lot to learn in there.
