Cooking Smaller Portion of Jambalaya in Smaller Pot

I have to cook a jambalaya for about 35-40 people, but the only pot I have is a 20 gallon. Anyone have any issue of cooking a much smaller jambalaya in a larger pot?

You don't have a friend that would loan you his 5 gallon? I don't see why you'd have an issue using yours though. But I have several friends with various size pots. I recently borrowed a 40 gallon to do a jambo for a wedding reception.

I am in Nashville, this is the only size we have for the office. I want to get a smaller one for times like this, but unfortunately this is all I have for this week.

I've never done this, so not sure. My concern would be the extra empty space when the rice is cooking. Honestly, what I would do is cook 10 pounds of rice, which would be half the pot, just to make sure. Bring to-go containers and let everyone take some home. I wouldn't hesitate to cook half the pot.

I've made half full pots with no issue before. As long as you have a properly fitting lid, shouldn't be an issue.

Just curious, but how much rice (cups) are you planning on using for 35-40 people?

Based on the jambalaya calculator, a 20 gallon pot half full will require 12.80 lbs or 32 cups

i do it all the time. i love the extra room, so i can be a little sloppy stirring while drinking...plus my burner on my 20gal is better than my 5gal.

His wouldn't be half full, his would be 1/4 full. 5 pounds of rice would be needed for 30-40 people. A 20 gallon pot will cook 20 pounds of rice (or more).

You're talking 15 gallons of empty space. I think it will work, but I cannot guarantee being I've never done it. I've done half pots and they work fine.

I will most likely do a half pot, I can just donate the rest to the local fire department if we have way too much.

You’ll be fine. My recs: cook 10 lbs of rice, use 2 gallons of water, 25 lbs of meat, 10 lbs of onions. Can’t really mess this up. Bring quart ziplocks and freeze the leftovers.

Thanks for the help. Came out great. I honestly loved having the extra room using the larger pot for the smaller amount.
