Looks a lot better than the first turkey I fried. Another thing that will make them too dark or burn easy is if the seasoning/injection that's has sugar/corn syrup in it.

Good call. I've gone to using only butter with seasoning as my injection. Kinda just enhances the turkey flavor, and doesn't have all the corn syrup.

Our family has always put a paste of Tony's and Worcestershire sauce on the outside so ours always look dark. Inside is super moist though.

looks a little over.. I fried 3 yesterday morning. they were more medium brown that black after 3.5 mins / pound.

what type of oil did you use?
