Commercial grade ice cream maker (like at a yogurt place). How long can the ice cream stay

In the machine before it goes bad? Or should it be removed after 24 hours or whatever?

It's a water cooled commercial grade ice cream maker.

Trick question.

The answer is that the ice cream maker is always "being cleaned."

TCBY veteran checking in here. we had to break down the machines every night due to the risk of eColi bacteria.

took about an hour to push the last of the yogurt out into containers we put in the freezer then to run hot water through it and take it completely apart, scrub in the sink to get all the silicon grease off and squeeze the o-rings off and leave them on a towel.

it was always a debate as to who had to mop & clean the toliets vs who had to break the machines down each night.

both jobs sucked.

4-5 days.

The hopper will create "foam" on the top of its in constant run cycle. Drain the machine every day, mix 50/50 with new product, and then refill. Not only will it get bad (spoil) but it can also start to get grainy and or icy.

Interesting debate since I've heard some horror stores from Taylor Freeze tech about that very scenario. Well kinda, there's involved the same person have to do both jobs. Stores were shut down.

There was a place in downtown Birmingham that ended up having bad things happen in the yogurt machines. I had a chocolate mint flavor that tasted off one day, and mentioned it to them and got something else. It was off as well. Someone hadn't been cleaning them properly. They ended up shutting down for like 2 weeks shortly after that. Never really recovered.

A "friend" worked there when they first opened and told me that owner Beau tried to orally caress his wiener one time in the cooler. Odd thing is the guy didn't quit and had off on football saturdays. Did he try any of that shite with you? Beau, not my buddy.
