Chili with no beans

Got a request to make a chili with no beans. I have never done it this way before....i feel kinda weird.

I usually leave them out now, though I grew up different. If you'd like to have a little fun, run the beans through the food processor, then add to the simmering chili. Creates a nice texture as a bit of a binder. You have beans...no one gets hurt.

Embrace it. Try it with ground venison if available.

Real Texas style chili has no beans and a lot of Texans get upset if the beans are in there.

I don't use ground beef if I'm doing chili without beans. I like to use cubed beef, usually stew or soup meat that I've cut a little smaller, or a chuck roast. For some reason, having the meat be in a more substantial form seems to work better for me.

Naw, it had to do with what would grow wild in Texas. Cowboys would either take dried "bricks" of chilli pepper, spices and meat out on the trail. This could easily be boiled for a meal. Or a more organized ranching outfit would plant chili peppers, oregano, wild onions and garlic along the cattle trail. Then they only had to pack dried meat to take with them. Texas chili has no tomatoes either.

My current favorite no bean chili.
Ingredients
2 lbs pork butt cut into 1-inch cubes
2 lbs ground beef (You'll need the fat. This isn't health food.)
1/2 cup chili powder (Your local supermarket brand tastes like cardboard.) You may not need the whole amount. It depends on the chili powder.
1 huge onion roughly chopped
1 head garlic minced or pressed
8 New Mexican green chilies roasted, peeled, seeded and chopped. (can use aneheim, serano, jalepeno, poblano, etc)
1 tablespoon hot Hungarian paprika (This is legal. Paprika is a chili.)
1 tablespoon ground cumin
4 beef bouillon cubes
1 28-oz can crushed tomatoes (Don't worry. You won't even know they are there.)
1 12-oz bottle amber Mexican beer (Dos Equis, Noche Buena, or any Oktoberfest will do.)
1/4 cup Bourbon (One of those things that just happened)
2 squares bitter baker's chocolate -- (Not as weird as it sounds.)
Salt to taste
Preparation
Sautee all of the garlic and onions until translucent. Add all of the meat, chili powder and brown. Salt the meat while cooking. Put into your chili pot. Cast iron is best. Repeat until all the meat is done. Put the rest of the ingredients in your chili pot and simmer for an hour. As in any recipe, the amount of ingredients is variable. Add more of anything you want, especially chilies.

same here...but cooked a real texas chili with cubed deer steak for the first time this year. Got a recipe off here. it was seriously easy and damn good.

If you are not using beans you must use the Merciless Peppers of Quetzlzacatenango. They are grown deep in the jungle primeval by the inmates of a Guatemalan insane asylum.

I'll eat chili with beans, but I don't usually make it with them because the kids don't like them.
Plus I can freeze the leftover bean-less chili in small portions and use it later on chili dogs.
