chili recipe ideas

We are having a chili and soup cook-off at the High School I work at on one of our in service days. I need the FDB's ideas and suggestions on both.

There's plenty out there, and I'm sure you'll get plenty of recipes posted.
My few pieces of advice:
1. Don't use ground beef
2. Refrain from beans although since you work at a high school, you're probably surrounded by idiot women who think beans are supposed to be in chili.
3. Use fresh peppers.
4. Season at each step.

Just a guess that cubed meat might be preferred there, but it wouldn't be over here.

-Ground Pork
-Fresh Cajun Sausage (out of the casing)
-Fresh Jalapenos and Serranos diced (5 of each depending on pot size, leave seeds in a few for heat)
-Chili Powder
-Ground Cumin
-Bell Pepper
-Yellow Onion
-Red Onion
-Garlic Minced
-Cajun Power Garlic Sauce
-1 pack McCormick Chili Mix
-1/2 Dark Beer
-1 Tomato Diced
-Tomato Sauce
-Cajun Seasoning
-Salt & Pepper
-Hershey Bar
-Water or Stock for liquid depending on consistency you want
I'll let you figure out portions of ingredients. Dont know how big of a pot youre making. Garnish with chopped white onion, sharp cheddar, cilantro and sour cream.

this is the biggest change I made to making my chili and it really helps the end product when you layer the flavors.
also add something sweet like molasses or brown sugar .. and adding beer never hurt. i'm a big fan of smoked meats in chili.

Is beer allowed, being that it's in conjunction with a high school? If so, use a dark beer for the liquid (I like to use Turbo Dog or Shiner Bock).

not the person who originally wrote it but i've seen a few shows on chili competitions, where the competitors said using fresh peppers wasn't done....their logic was that the level of heat can vary too much from pepper to pepper, producing inconsistent results in their chili. thus, they said the competition people prefered using powder...i'm sure the serious folks make their own power. but the comments on the shows seemed to suggest that few used fresh peppers.
for home chili makers, minor inconsistencies probably aren't that big a deal; but for competition folks, i'm sure it matters to them quite a bit.
