Chicken Lettuce Wraps (photos)

This is a high sodium dish, but relatively low carb and low calorie.
We make these from time to time and always enjoy them. This dish is easy to put out, but requires Chinese sauce ingredients you may not have and to not use them takes away from the dish. We like Chinese and Thai, so we usually have some/most of what we need.
Sorry no photos of this prep.
You'll need:
1 pound ground chicken
1 Tablespoon Sesame Oil
1 Tablespoon Olive oil
1 Medium onion, small chop
Sauté the onion in olive and sesame oil until clear, add the ground chicken and cook until done.
To the cooked chicken, you will add:
1/3 cup Hoisin Sauce
2 Tablespoons Soy Sauce
1 Tablespoon Rice Wine Vinegar
1 Tablespoon (or to taste) Asian Chili Garlic Sauce
3 cloves garlic, finely minced
2 teaspoons freshly grated ginger
8 ounce can Water Chestnuts drained and diced
If you like, you can add 1 tablespoon toasted sesame seeds
Continue cooking the meat for about three minutes after adding the sauce ingredients to meld the flavors and set the sauce.
Garnish the finished meat with two diced green onions.
Serve with Bibb Lettuce or Iceberg lettuce, portioned to size so that you can serve the wraps.
Note: This dish can be served over white rice or Chinese noodles
