Can you freeze them directly in a bag or is there something else needed to be done?

Yeah. Get all the air out of your ziploc as best you can, if you don't have a foodsaver.

Yes. Put enough water to cover the tails in the zip lock bag and get the air out to stop freezer burn. My parents have been doing this for 30 plus years. Last two weeks of crawfishing goes to fill the freezer for the rest of the year.

Yes. Sometimes I don't even take the shells off the tails. Granted I usually cook them within 30 days.

I have a foodsaver so I'll go that route!

Yep. Leftover crawfish get peeled and fridged. Whatever doesn't get put into the omelets the next morning get portioned, frozen, then vacuum packed.

Also, this. That stuff can get some kind of nasty pretty quick.

Yes you can. We get our crawfish peeled on halves and they ziplock/foodsave them. With the price this year we will be putting away A LOT

I froze some with the head fat .....is this going to be a problem? Its pretty close to air tight in a ziplock.

It's not overnight, but that stuff WILL go rancid on you over the span of a few months. I'd use it as quickly as possible and have a plan B in place when you do decide to use it in case you find out all your crawfish have turned on you. Luckily, you can quickly sub in crab or shrimp for almost anything you'd use crawfish for, so your base won't be a waste. At worst, you'd probably just need a quick trip to the store for a pound or two of stew shrimp if you come up with rancid crawfish.
