I soak filets in an eggwash (milk, eggs and a little mustard) for anywhere from 20 minutes to a couple hours in the fridge before cooking. Heat oil to 375 and dredge in corn flour 75%/corn meal 25% mixture. Fry until floating +1 minute. Dump out on wire rack and season with whatever you want.
Some people like more corn meal than corn flour and some like to season the batter, it's really up to you
