Can anyone give me an easy recipe with directions to frying some good catfish?

Wife has been out of town and is coming back today. I would like to cook her a good meal. I am not a chef but I am not retarded in the kitchen either.

Any help would be greatly appreciated.

Soak in buttermilk

Dredge in seasoned cornmeal.

Fry at 350 until golden and floating. Don't crowd the pot.

Drain on a wire rack.

Feed wife.

Enjoy the benefits from feeding wife well.

So can I just buy seasoned cornmeal? Is that what it is called?

So I just soak the fish in buttermilk for a few minutes?

Ill add that I never put seasoning in my fish fry, when it come out of the grease season it while it is still hot with creole seasoning..... Tonys, Slap Ya Momma, Kick Ya Dog, Zatarains.....

If you buy Louisoana Fish Fry its half corn meal and half corn flour.

The buttermilk isnt necessary but if you wish a few minutes is all yoy need.

Season regular corn meal with Tony's , or salt, black and red pepper. The buttermilk soak will give your great crust.

IDK..... its not me.

You can fry fish, cook a gumbo and jambalaya many different ways. When it comes to fish I like to keep it simple.

From my understanding, Buttermilk tenderizes the fish as well as acting as a binding agent.

I've soaked from 30 mins-2 hour with good success.

straight cornmeal is for oysters. use fish fry or mix 1/2 flour with 1/2 cornmeal

buttermilk is for shrimp. mix crystal hot sauce with a squirt of mustard and let the fish sit in that for an hour. batter and fry.

I like cornflour over cornmeal. There is an intermediate grind called cream meal, which is best, but it is hard to find. My local supermarket sells cornflour, so that's what I use.

i know the hot sauce/mustard thing might sound extreme if you've never had it. but trust me it works. if you dont like it i'll reimburse you for what you spent on it....no lie.

If catfish gets any more tender than it comes it'll fall apart.

Filets covered in LA fish fry is all you need to do.
