I know it’s been discussed here a lot. Don’t have time to search but I really don’t want to mess up 20# of shrimp. Help me out. Boil the potatoes and other stuff and when they are done, drop the shrimp in and turn off? Soak for how long? It pisses me off when they won’t peel! TIA

That's because they are overcooked.

I know yall like to soak crawfish, shrimp, etc. For alleged extra flavor, but that leads to overcooking. If you want to soak, I would recommend cooking them for a few minutes, then soak them in a well seasoned ice bath.

So putting the shrimp in boiling water and turning off the heat will over cook them?

Drop them in, stir, you’ll see them change color. Pull them, they’re ready.

Get the water boiling. Throw in the shrimp. Let it return to a boil for about a minute. Look for a gap between the shell and the meat. When many have it, which should be around the one minute mark you start cooling the water with bags of ice and placing the boiling pot in a larger vessel of water. If the gap between the shell and meat shows up earlier, pull them of the fire at that time. I then soak for about 20 minutes in the cooled water. The shrimp are never difficult to peel.

Cutting the heat doesn’t stop the cooking.

Downvote all you want but the stale cracker method produced the best boiled shrimp I’ve ever done. Look it up on YouTube.

Basically boil them in nothing but water for 1 minute, then add seasonings and soak. Best peeling and tasting shrimp I’ve ever done and I was a non believer.

I know that everyone has an opinion but I struggle w boiled shrimp. I have tried everything. Barely cooked, cooked as described most places, cook let soak hot, warm, cold seasoned water.

Best results come from add cold shrimp to boiling seasoned water, turn fire off almost immediately, soak 5-6 minutes then remove and serve once allowed to cool a few minutes.

But even then they are perfect like 75% of the time

For, me shrimp be the devil. Crawfish are a walk in the park easy by comparison

I agree foot. They are just difficult. So today I boiled the potatoes mushrooms and garlic about 8 minutes with half the seasoning . Dropped the shrimp in and added more seasoning turned the fire up high for about a minute. Turned off the fire and soaked about 15 minutes. Came out pretty good. Some were a little over cooked but not bad

Why didn’t you cool the water for the soak?
