If you detour towards Leakey, Tx make sure to eat at the Hog Pen. Not a flashy place but the bbq and sides are excellent

Some recs in Houston area:

Truth (but be mindful of lines; could be a wait)

Roegels (Voss Rd is about 7 minutes off I-10; Katy location is on I-10 but IMO he's still not up to his Voss Rd standards).

Brett's in Katy (3-5 minutes)

And in Luling, Burnt Bean (never been but it gets rave reviews)

Game plan: hit a couple on your way west and a couple on your rebound.

Also, check dates. Some joints aren't open 7 days a week.

I think I’d just take a detour to Lockhart. It’s a neat little town.

Lockhart is my go to place. But sometimes the timing isn’t right. Katy and Beaumont Recs would be great

If you do, Smitty's has the best brisket. Black's has the best beef ribs. Kreuz market has the best sausage.

Went to Patillos in 2020 and really enjoyed it. You go there for the all beef sausage. Their ribs were good, and they have a good dirty rice you can get as a side. They call it “jambalaya” but it more resembles dirty rice to me.

found this place about a year ago and it was really good. Not sure if they have finished moving to their new location yet, I think he was doing pop-ups while the new location was being finished.

City Market in Luling

Beef sausage is the GOAT

Brisket is hit or miss, but always has good flavor. Ask for fatty brisket.

Ribs are pretty good

And the sauce is darn good

It's in Seguin and yes it does get great reviews.

Brett’s fully opened up at their new location last weekend. And it would be a solid choice for your drive to Kerrville

Depending on your travel time, if you can’t make it to Lockhart/Luling, closer to Kerrville would the Original Rudy’s BBQ. It’s decent BBQ and a neat stop being the original location. Just outside of San Antonio I-10W and the Loop.

Lived in Kerrville for 3 years. Buzzies is vastly overrated and overpriced. I never saw more than 3 people eating there at a given time. Be prepared to pay close to $20 for a brisket sandwich.
