What combination of spices would you use? Want to try to use homemade seasoning instead of the taco/fajita packets.

Not Mexican per se, but I smoke peppers, dry them in the oven, and then grind them up to use as chili powder in southwest-inspired dishes.

That sounds really good. Could you also make your own cayenne powder that way?

"Mexican Seasoning" is kind of broad. Can you narrow it down?

For tacos I usually use a mix of cumin and chili powder plus whatever else I have on hand that looks good at the moment. Usually red pepper, garlic powder, black pepper, and maybe some cayenne. I very much eyeball/smell/taste test it.

Heavy chili powder, plus paprika, cumin, garlic, onion, cayenne, salt

And a few chopped chipotle peppers in adobe sauce gives a great smoked heat

My wife uses this for tacos. Its better than any of the store bought packets of taco seasoning. It doesn't look like enough salt, but is comes out great.
