Anyone have advice on charcoal grilling a turkey?

Offset with smoke from a fruit tree. I like apple. Don't tie the turkey. Cook fairly hot, like you would smoke a chicken.

Spatchcock it - done in about 90-120 mins depending on size.

In the same boat. I'm spatchcock ing over charcoal. Gonna try to keep offset in 400-425 degrees. Putting foil over wing tips and drum sticks to prevent burning. Will probably baste with butter.

I dry brined the bird but a little concerned about enough flavor. We shall see.
