Anyone have a killer Mac n cheese recipe?

My wife makes a killer mac & cheese with chicken, buffalo sauce, bacon, bleu cheese, sharp cheddar and bowtie pasta. No idea how much of each, but it's one of my favorite dishes.

mix up a can of tuna with it. Less than a dollar, and adds protein to your humble meal, Bob Cratchit.

Don't need much. When making the bechamel put in just a few dashes.

ETA: 1/2 tsp or so for a 5-6 cup bechamel

I made a pesto one last week with prosciutto that was delicious. If you google pesto Mac and cheese it should be the first recipe. I left out the peas.

I always try to use unsalted if available, just because you know how much salt is going in, but there is no discernible taste difference between the two IMO.
