my dad actually fries it like French fries after he dips it in the egg/vanilla/milk wash.
it's so amazing that I call him to do it at my house at least once every few months.

He deep fries it?
I cook it on a griddle in butter until it's a bit crisp and golden brown on the outside.

Interesting. Does the oil get dirty with all the dripping from the egg mixture? Mine soak up a good bit of that mixture.

Looked up fried French toast. Most recipes have a batter made with flour. Does your father use a flour batter?

Torrija is a typical dessert of Lent and Holy Week in Spain. It consists of a slice of bread that is soaked in milk or wine with honey and spices, and, after being dipped in egg, fried in a pan with olive oil.
Torrijas are made by soaking stale bread in milk overnight, before dipping it in batter and frying it with olive oil. This cooking technique breaks down the fibres of the bread and results in a pastry with a crispy outside and smooth inside.[1] It is often sprinkled with cinnamon as a final touch.
