Any turkey gumbo recipe suggestions?

Doing a leftover turkey gumbo today. Stock's been on for a few hours.

Gumbo Pages suggests 6 quarts of stock which seems like way too much.

I'm using 2 pounds turkey meat and 1 pound hickory smoked sausage. 2 pounds of frozen cut okra are available.

Make your base and add stock till its the consistency you like.

I cooked a gumbo yesterday with 2 lbs of chicken and 1 lb of sausage and only used 2 quarts of stock.

I'm not a fan of okra in anything other than a seafood gumbo. If you want to add it feel free.

My buddy makes a "Black Friday" Gumbo with Left over fried turkey and baked ham in place of the sausage. Really tasty.

Turkey Gumbo Recipe:

-roux
-okra
-Leftover turkey
-Andouille Sausage(the only sausage to use making turkey or chicken gumbo)
-Turkey drippings from baking/ chicken stock until desire levels
-season to taste

Not for me. I love andouille, but I also love a good smoked sausage. Either works well for me.

OP, as suggested, add the stock until you get the consistency you want. No okra for me, but by all means, use it if you like it. It will thicken the gumbo, so keep that in mind when adding your desired amount of stock.

The great thing about team okra is we'll still eat the shite out of it okra or not and not complain one bit...
