I made a roast chicken and then used the stock for rice. Overcooked it so now I've got a pot of soft, mushy rice. Will put it in the fridge tonight and see if anybody here has a suggestion on what I can do with it. TIA.

The only thing I can think of is to add some milk, butter and sugar and eat it for breakfast. Or makes a bit more rice that is not mushy & mix it together and make rice pudding.

I gave it to the dogs. They thought it was excellent.

Rice is one of those things if you screw up its better to just throw it away and start again rather than try to fix it. I think a guy got kicked off of Top Chef for thinking he could fix rice that was mushy if I remember correctly.

If you mess up a steak: shame on you.

If you mess up rice, who cares. Start over.

I love mushy rice!

However my husband can cook rice perfectly almost every time and I like that too!
