Was given some amberjack. What is the best way to cook it?

i dont know about med-rare...it's pretty tough when raw if its a big chunk. i go all the way thru, but just to there. pull it at 135ish and let it coast

another great way is to poach it in oil

Sear with white pepper and salt.

Finish in oven at 210 degrees.

Make a crawfish and tasso beurre blanc
