Alton Browns Eggnog - Gunk at the top.

I have been making This for a few years and gifting to my neighbors.

I made a batch before I left for Thanksgiving for a week and when I got back home, I noticed some of the bottles had formed a gunk at the top, right where the bottle gets thin, about 1/2 inch thick. (They are in the Fridge).


I shook them real well and most of the gunk was incorporated back into the nog.

I am just wondering if the Eggnog is still good, I don't want to get anyone sick for Christmas.

I also have a bottle in there that has been aging since last Christmas, Cant wait to try it.

Mine usually has a head or some foamy substance at the top (I keep it in the fridge). I just shake it well and pour it up and have never had any issues. You could always just give it the old smell test.

Yea, That's pretty much what was in mine, after a few good shakes, it disappeared. It Smells, fine.

I will definitely try some before I pass it out to anyone.

Most likely just protein separation. I've had this happen with me in the past with it as well. Nothing to worry about.

Yeh. I just shake it up. No issues. I’ll also add, I just popped open one from last year. Poured it in a pitcher to let it air out a bit. It was damn good.

I have 3 jars from last year in the back of the fridge. I'm a little nervous but am looking forward to seeing how it tastes this year.

I’ve got a bottle that’s going on 2 years. A friend of my wife (no pic of wife or friend) pours it in her coffee every time she’s visiting with us.

This is nothing to worry about. It is normal for recipes to separate. We've had stabilizers like guar gum in our food for so long that we tend to forget.

This happened to me for the first time this year. I opened a jar last weekend and it was still fine. I might strain before serving to others though.
